Blueberry muffins with cake like consistency

Recipe Ingredients for Blueberry Cake Muffins

2 cups flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 cup margarine (softened)
1 cup sugar
2 eggs
1 tsp. vanilla
1/2 cup milk
1 cup blueberries (drained)

Recipe Directions for Blueberry Cake Muffins

Sift flour with baking powder and salt, set aside. Beat butter, sugar, eggs and vinilla until light and fluffy, about 4 minutes. At low speed beat in flour mixture alternating with the milk, beginning and ending with the flour. Beat just until smooth. Gently fold in blueberries, just until combined. Fill cups 2/3 full. Bake 20-25 minutes at 375 degrees. Makes about 1 dozen muffins.
