Recipe Ingredients for Blueberry buttermilk pancakes

1 cup flour, white
1/2 cup flour, whole wheat
1 tbsp sugar
1 1/2 tsp baking powder
3/4 tsp baking soda
2 egg whites
1 1/2 cups yoghurt, low fat
1 tsp vanilla extract
1 cup blueberries

Recipe Directions for Blueberry buttermilk pancakes

  1. Whisk together the flours, sugar, baking powder, and baking soda. In a separate bowl, whisk together the egg whites, yogurt and vanilla. Whisk the wet ingredients into the dry until just smooth. Stir in the blueberries.

  2. Lightly grease a griddle and heat to medium-high heat. Drop 1/4 cup of batter at a time onto the griddle. Let cook until bubbles form on the surface, about 1 1/2 minutes. Flip each pancake to cook the other side until golden, about 1 minute.
