Light and fluffy pancakes- perfect for special breakfast

Recipe Ingredients for Blueberry Buttermilk Panackes

1 1/3 cups all purpose flour
3 T sugar
2 1/2 t baking powder
3/4 t salt
1 1/4 cup buttermilk
2 large eggs
2 T. butter, melted
2 cups fresh blueberries

Recipe Directions for Blueberry Buttermilk Panackes

  1. Preheat oven to 250. Place baking sheet in oven. Wisk first 4 ingrediants in large bowl. Wisk buttermilk, eggs, and butter in med. bowl; stir in dry ingrediants. Fold in berries.

  2. Heat large nonstick griddle over medium heat; spray with nonstick spray. Drop batter by 1/3 cupfuls onto griddle. Cook pancakes until brown, spraying pan with spray as needed, about 3 minutes per side. Transfer to sheet in oven to keep warm
