The original serving size for this recipe is 24, but I use my Pampered Chef stoneware pan to make 12 large muffins.

Recipe Ingredients for Blueberry Buttermilk Muffins with Honey

2 1/2 cups whole wheat flour
1 1/2 tsps baking powder
1/2 tsp baking soda
1 cup honey
1/4 tsp salt
2 eggs, beaten
1 cup buttermilk
4 ounces butter
1 1/2 cups blueberries

Recipe Directions for Blueberry Buttermilk Muffins with Honey

  1. Mix dry ingredients together in a large bowl.

  2. In another bowl, whisk eggs, buttermilk and butter that has been melted. Make a well in dry ingredients and pour in liquid ingredients, mixing quickly.

  3. Fold in blueberries. Spoon batter into Pampered Chef stoneware muffin pan and bake till golden brown.

  4. Bake at 400F for 20 to 30 minutes.
