Buckwheat & wheat flour combined with blueberries for waffles.

Recipe Ingredients for Blueberry Buckwheat Waffles

1 cup buckwheat flour
2 cups flour
4 tsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg
1/4 cup extra virgin olive oil
2 eggs
2 egg whites
1 1/4 cup coconut milk
1/4 cup applesauce
3/4 frozen blueberries
1 tsp vanilla

Recipe Directions for Blueberry Buckwheat Waffles

Mix all dry ingredients in a medium bowl. Whisk all wet in a small bowl, then add to the dry ingredients and mix well. Using a ladle, pour onto lightly buttered waffle iron. Cook 2-5 minutes. Serve with honey drizzled on top.
