Blueberry muffins with buckwheat flour and honey.

Recipe Ingredients for Blueberry Buckwheat Muffins (with EVOO)

1 cup flour
1 cup buckwheat flour
3/4 cup sugar
5 tbs honey
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp kosher salt
1/2 cup coconut milk
1 egg
1 egg white
1 cup frozen blueberries
1/4 cup extra virgin olive oil

Recipe Directions for Blueberry Buckwheat Muffins (with EVOO)

Set oven to 350 degrees. Mix all dry ingredients in a medium bowl, in a small bowl whisk together the egg, egg white, coconut milk & honey. Add wet to dry, then fold in blueberries. Grease cupcake tray or cake pan, pour ingredients in, bake for 25-35 minutes (25 for cupcakes, 35 for cake). When toothpick comes out clean, pullout & let cool for 10 minutes.
