Recipe Ingredients for Blueberry Breakfast Cookies

1/3 cup rice milk
3/4 teaspoon apple cider vinegar
1 cup all-purpose flour
1/4 cup whole wheat pastry flour
1/2 cup oats
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup sugar
2 tablespoons maple syrup
1/2 teaspoon vanilla
1/2 cup fresh blueberries

Recipe Directions for Blueberry Breakfast Cookies

  1. Preheat oven to 350 F

  2. Mix the soy milk and vinegar and let sit for 5 minutes

  3. In a medium bowl, mix together all the dry ingredients, then add the soy milk and vinegar mixture, maple syrup, vanilla, and blueberries.

  4. Drop 3-tablespoon portions of dough onto a parchment-lined baking sheet and backe for 12 minutes. Transfer to a wire rack and let cool. These are best eaten right after baking because they tend to get a bit wet and gummy after sitting around for hours.
