Recipe Ingredients for Blueberry Breakfast Cake


Dry ingredients:
1 cup quick oats
1 cup whole wheat flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp ginger
1/2 tsp salt

Wet ingredients:
1 1/4 cup blueberries
1 egg white
1 T lemon juice
1/3 cup unsweetened applesauce
1/2 tsp vanilla extract

Topping:
1 1/2 T sugar
1/4 tsp cinnamon

Recipe Directions for Blueberry Breakfast Cake

  1. Preheat over to 350F. Spray 8x8 baking pan with oil or cooking spray.

  2. Put oats in food processor and grind until fine. Mix the oat flour with other dry ingredients. Stir in 1/4 cup of the blueberries.

  3. Put the remaining cup blueberries into food processor with wet ingredients. Pulse to coarsely chop blueberries but not completely puree.

  4. Make a well in the center of the dry ingredients and pour in the wet. Stir until moistened and combined but don't over-mix.

  5. Pour into prepared pan (batter will be thick).

  6. Mix sugar and cinnamon topping and sprinkle over the top.

  7. Bake 25 minutes, until a toothpick inserted in the middle comes out clean. Allow to cool for at least 15 min.
