Recipe Ingredients for Blueberry Breakfast Bake

8 slices white bread
8 oz. neufchatel cheese
1 cup frozen blueberries
2 cups egg substitute
1 1/2 cups 1 % milk

Recipe Directions for Blueberry Breakfast Bake

  1. Grease rectangular baking dish, 11 x 7 x 1 1/2 inches. Spread half of the bread pieces evenly in baking dish. Top with cream cheese. Sprinkle with blueberries. Spread remaining bread over blueberries.

  2. Combine egg substitute and milk in a medium bowl; pour over bread.

  3. Cover unbaked mixture tightly with aluminum foil for at least 8 hours but no longer than 24 hours.

  4. About 1 1/4 hours before serving, heat oven to 350 degrees. Baked in covered baking dish 30 minutes. Uncover and bake 25 to 30 minutes longer or until top is puffed and center is set.

  5. Serve with blueberry syrup.
