The recipe I had actually called for Aronia Berries, but you can use Blueberries instead.

Recipe Ingredients for Blueberry Bread

2 cups Flour
1 1/2 teaspoon Baking Powder
1 teaspoon Salt
1/2 teaspoon Baking Soda
1 Egg
1/8 cup Margarine, light
3/4 cup orange juice
1/2 cup Splenda
1 cup Blueberries
1 cup Nuts

Recipe Directions for Blueberry Bread

  1. Sift together flour, baking powder, salt, and baking soda.

  2. In a blender, combine egg, margarine, orange juice, and Splenda.

  3. Add berries and nuts and chop briefly.

  4. Empty into flour mixture.

  5. Mix by hand until moistened.

  6. Bake in a greased 9x5 pan at 350 F for 50-60 minutes.
