Recipe Ingredients for Blueberry bran muffins

1 1/2 cups wheat bran
1 cup soy milk
1/2 cup unsweetened applesauce
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1 cup whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup flax
1 cup blueberries
1/3 cup candied ginger

Recipe Directions for Blueberry bran muffins

  1. Preheat oven to 375 degrees. Grease muffin cups.

  2. Mix together wheat bran and milk, let stand 10 minutes

  3. In large bowl, mix together applesauce, egg, brown sugar, and vanilla. Beat in bran mix. Add flax. Sift together flour, baking soda, baking powder and salt. Stir into bran mixture just until mixed. Fold in blueberries and ginger.

  4. Scoop into muffin cups

  5. Bake 15 to 20 min.
