Simple recipe. Can be made with fresh or frozen blueberries or other berries.

Recipe Ingredients for Blueberry Bran Muffins

1/2 cup flour (unbleached)
1/2 cup whole wheat flour
2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 1/4 cup bran cereal (All Bran)
1/2 cup milk (1 %)
1/2 cup orange juice
1 egg (or 1/4 cup egg substitute)
3 tbsp. canola oil
1/2 cup brown sugar
1 cup blueberries

Recipe Directions for Blueberry Bran Muffins

  1. Preheat oven at 400 F.

  2. Spray muffin pan with Pam.

  3. Mix together : the two flours, baking powder, baking soda and salt. Set aside.

  4. Mix together : Bran cereal, milk and orange juice. Let rest for 3 minutes.

  5. Add to cereal mixture : egg, oil and brown sugar. Mix well.

  6. Add liquid mixture to flour mixture and fold in berries. Do not overmix.

  7. I use a spring ice cream scoop todistribute batter evenly in muffin pan. Fill at 3/4 each cavity.

  8. Bake at 400 F. 20-25 minutes.
