Blueberry Bran Muffins Recipe

Originally, this was a recipe for Apple Muffins, but I didn't have any apples in the house, so I substituted blueberries instead. The flavor is interesting since blueberries aren't usually combined with the bran-like flavor of wheat germ, but my family loved them and the blueberries kept the muffins moist and sweet. Definitely a nice change to an old recipe.

Recipe Ingredients for Blueberry Bran Muffins

1 cup 100% whole wheat flour
1 cup wheat germ
1/2 cup sugar
1/2 tsp salt
3 tsp baking powder
1 egg
1 cup milk
1/4 cup canola oil
1 cup blueberries

Recipe Directions for Blueberry Bran Muffins

  1. Preheat oven to 400 degrees. Grease muffin tins and set aside.

  2. In a large bowl, mix dry ingredients together and set aside.

  3. In a separate bowl, mix the egg, milk, and oil until thoroughly combined.

  4. Pour the combined liquid ingredients into the dry mix and stir until everythings is moist. The batter will be rather thick.

  5. Stir in blueberries.

  6. Scoop into muffin tins and bake 15 - 20 minutes. These muffins do not rise very much, so it doesn't matter if the tins are mostly full.
