Recipe Ingredients for blueberry bran muffin

1 cup egg substitute (or real eggs)
1 cup buttermilk
8 oz unsweetened applesauce
3 tbsp honey
1 1/2 cups bran cereal
1 1/2 cups oatmeal
2 cups all purpose flour
3 1/2 tsp baking powder
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
1 tbsp cocoa powder
4 tbsp vegetable oil
2 cups blueberries
1 cup walnuts

Recipe Directions for blueberry bran muffin

  1. combine egg, buttermilk, bran, oatmeal, applesauce and honey in a large bowl. allow to sit for 15 minutes, then beat.

  2. combine flour, baking powder, baking soda, salt, cinnamon, cocoa powder and oil.

  3. mix dry ingredients into the large bowl, beat with hand mixer until smooth. stir in blueberries and walnuts

  4. bake at 400 for 20-25 minutes

  5. yields about 18 medium sized muffins
