Recipe Ingredients for Blueberry Bars

2 1/2 cup frozen blueberries
1/4 cup water
2 tbsp splenda
1/2 tsp lemon zest
2 tsp lemon juice
1 tbsp cornstarch
1 cup rolled oats
3/4 cup whole wheat flour
3/4 cup wheat bran
1/2 cup brown sugar substitute
1/4 tsp baking soda
1/2 cup margarine
3 tbsp egg substitute

Recipe Directions for Blueberry Bars

  1. Bring blueberries, water, splenda, lemon zest & juice, and cornstarch to boil. Cook, stirring until thickened and bubbly

  2. Combine oats, flour, wheat bran, brown sugar substitute, and baking soda in bowl. Work in margarine until looks like coarse crumbs. Add egg substitute stir until moistened. Set aside 3/4 cup of mixture. Press remaining mixture in 8 in square baking dish coated with cooking spray. Spread blueberry filling on top. Sprinkle with reserved mixture.

  3. Bake @ 350 until crust is golden and blueberry filling is bubbly at edges, about 30 minutes.

  4. Let cool completely before cutting into bars.
