Recipe Ingredients for Blueberry & Banana Pancakes

1 cup skim Milk
1/2 tablespoon Lemon Juice
1 Banana
1 large Egg
1 teaspoon Vanilla Extract
1 tablespoons Brown Sugar
1 tablespoon Canola Oil
1/2 cup all-purpose Flour
1/2 cup whole wheat flour
1 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/2 cup Blueberries

Recipe Directions for Blueberry & Banana Pancakes

  1. Combine milk and lemon and set aside.

  2. Mash banana and mix with eggs, extract, sugar, honey, and butter.

  3. Sift together dry ingredients. Combine banana mixture and milk mixture, then add to dry ingredients. Mix until just incorporated. Let sit covered for 5-10 minutes.

  4. Heat pan on medium high heat. Coat with butter.

  5. After coating blueberries with the remaining sugar and flour, add them to the batter and fold together, being careful not to mix any more than you have to.

  6. Dump 1/4 cup fulls of batter into the pan and flip when bubbles start around the edges. Cook on the other side until golden brown. Remove from the pan, re-coat the pan with butter in between batches, and continue with the remaining batter.
