Low fat, low calorie muffins adapted from another recipe :)

Recipe Ingredients for Blueberry Banana Muffins

3 cups all-purpose flour
1 tbsp baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tsp cinnamon
1 tsp nutmeg
2 banana
1/2 cup sugar
2 large eggs
2 tbsp canola oil
1/3 cup unsweetened almond milk
1 teaspoon grated orange zest
1 cup water
1 1/2 cups blueberries
1 tbsp flour (if using defrosted frozen berries)

Recipe Directions for Blueberry Banana Muffins

  1. Preheat oven to 375F

  2. Mix all dry ingredients together in a large bowl and set aside.

  3. Mash bananas, and add all other wet ingredients (including blueberries).

  4. Quickly mix wet and dry together until just mixed.

  5. Spoon into muffin tin, about a 1/4 cup per muffin and bake for 25-35 mins until golden brown.
