Makes 12 large muffins. Not too sweet.

Recipe Ingredients for Blueberry and Banana Muffins

1 c. whole wheat flour
1 c. unbleached flour
2 t. baking powder
1/4 t. baking soda
1 t. cinnamon
1/4 c. sugar
1 c. blueberries
2 bananas
1/4 c. oil
1/2 c. applesauce unsweetened
2 T. apple juice
1/2 c. low-fat milk
2 eggs

Recipe Directions for Blueberry and Banana Muffins

  1. Combine flours, baking powder, and soda, cinnamon and sugar in large bowl. Mix together bananas, oil, applesauce, apple juice, milk and eggs. Add to dry ingredients and fold in blueberries. Mix gently.

  2. Spoon into 12 muffins tins. Cook at 350 F. for 20-22 mins.
