I put them 1 to a ziploc (in freezer) and my husband and son grab them for lunches. NOTE: Recipe specified Sucanat which is non-refined sugar but the program wouldn't take that so I just put sugar.

Recipe Ingredients for Blueberry - Banana - Cranberry Delight Muffins

2 cups whole wheat flour
1/3 cup sugar
1 teaspoon cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
3 medium mashed bananas
1/2 cup unsweetened applesauce
4 egg whites
1 teaspoon vanilla
1 cup blueberries (frozen)
1/2 cup cranberries (frozen)

Recipe Directions for Blueberry - Banana - Cranberry Delight Muffins

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Line 12 cup muffin pan with paper muffin liners or lightly spray with Pam Olive Oil Spray.

  3. In a large mixing bowl, mix whole wheat flour, Sucanat (non-refined sugar), cinnamon, baking powder, and baking soda. Set aside.

  4. In medium mixing bowl, mix together mashed bananas, egg whites, vanilla extract, and applesauce.

  5. Mix the banana mixture into the flour mixture. Fold in the cup of blueberries and 1/2 cup cranberries.

  6. Spoon combined batter into lined muffin cups.

  7. Bake approximately 18 -22 minutes or until a fork inserted into the center of a couple of the muffins comes out clean.

  8. Yield: 12 Prep Time: 15 min Baking Time: approx. 20 min
