Makes 12 servings



Perfect breakfast muffins, or a healthy celebration cake. To make them special, add some low-cal meringue topping, and a few blueberries on top.

Recipe Ingredients for Blueberry Apple Muffins

255 g Flour
15 g Baking Powder
1 g Salt
100 g Caster Sugar
60 g Butter
250 g Semi-skimmed Milk
60 g Apple
50 g Blueberries

Recipe Directions for Blueberry Apple Muffins

  1. In a large bowl, sift together the flour, baking powder and salt.

  2. In a separate bowl, cream together sugar and butter. Stir the flour mixture into the sugar mixture alternately with the milk. Fold in the fruit. Pour batter into prepared muffin tin.

  3. Bake at 200C for 20 to 25 minutes.
