Really great, light-textured, muffins

Recipe Ingredients for Blueberry-Almond Wheat Bran Ricotta Muffins

1 cup wheat bran
1 cup whole wheat flour
1/2 cup white flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup skim milk
1/4 cup part-skim ricotta
1/4 cup canola oil
1/2 cup honey
1/4 cup almonds, chopped
2 eggs
1/2 cup blueberries, frozen

Recipe Directions for Blueberry-Almond Wheat Bran Ricotta Muffins

  1. Mix dry ingredients in big bowl.

  2. In medium bowl mix all wet ingredients.

  3. Coat blueberries with 1 tablespoon flour.

  4. Add wet to dry and mix until almost fully mixed. Add blueberries and mix gently.

  5. Fill in 12 paper-lined muffin cups. Bake at 400 for about 15-20 minutes. Cool on wire rack.
