Recipe Ingredients for Blueberry Almond Scones

1 1/2 cup All-Purpose Flour
40 g 0.5 cup Old Fashioned Oats
0.33 cup white sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon lemon juice
1/4 cup whole milk
106 g g) 0.25 cup Activia Light Fat-Free Vanilla Yogurt
6 tablespoon butter
1/4 cup chopped almonds
1 cup blueberries
20 g g) 0.25 cup Old Fashioned Oats
1 (1/8) teaspoon cinnamon
1/4 cup chopped almonds
1/4 cup honey

Recipe Directions for Blueberry Almond Scones

  1. Preheat oven to 425 degrees F

  2. Combine milk and yogurt in a small pitcher/bowl and set aside

  3. Combine flour, sugar, baking powder and salt. Cut cold butter into chunks and add to flour mixture. Use pastry blender (or hands) to cut butter into coarse, pea-sized crumbs. Stir in blueberries and 0.25 cup chopped almonds. Make a hole in the middle of flour mixture and add milk/yogurt mixture. Stir until blended. Let dough rest for 2 minutes.

  4. Knead dough until smooth and satiny (4-5) minutes on a flour surface. Pat dough out into an 8-inch round.

  5. In a separate bowl, combine (1/4) cup old-fashion oats with cinnamon and warm honey in the microwave.

  6. Pour honey over the 8-inch round of dough and sprinkle the old-fashion oat mixture and (1/4) cup chopped almonds on top.

  7. Cut the 8-inch round of dough into 8 pieces and place on baking sheet with about 1/2" between pieces.

  8. Bake for 16-18 minutes, or until golden brown.

  9. Place on cooling rack and let cool for 20 minutes before serving.
