Recipe Ingredients for Blueberry Almond Cookies

1/2 cup white whole wheat flour or whole wheat pastry flour
1/2 cup almond meal
2 tsp baking powder
1/2 tsp salt
1 stick (1/2 cup) unsalted butter
1 cup sugar
1 egg
1/4 cup reduced fat milk
1 tsp almond extract
2 tsp lemon zest
1/2 cup chopped almonds, toasted and cooled
1 cup fresh or frozen blueberries

Recipe Directions for Blueberry Almond Cookies

  1. In a medium bowl, combine flour, almond meal, baking powder, and salt with a whisk or large fork.

  2. - In another medium bowl, cream together the butter and sugar (or Splenda) using a hand or stand mixer. Add the egg and beat to incorporate. Add milk, almond extract, and lemon zest.

  3. - Stir the dry ingredients into the wet ingredients with a rubber spatula. Fold in the toasted almonds. Gently fold in the blueberries. Be careful to avoid over mixing so as not to burst the berries. Chill the dough in the refrigerator for 30 minutes.

  4. - Preheat the oven to 375 degrees F.

  5. - Using two small spoons, dollop mix onto cookie sheets lined with parchment paper or lightly greased. Bake until golden brown around the edges, about 14-16 minutes.

  6. - Remove cookies from sheet and cool on a wire rack. Store in an airtight container for up to 3 days or eat immediately.
