A savory scalloped potato dish with blue cheese, preferably Stilton, and fennel.

Recipe Ingredients for Blue Spuds

4 large potatoes, peeled & thinly sliced
1/2 fennel bulb, thinly sliced
1/2 onion, thinly sliced
3 oz blue cheese
1 tbsp whole wheat flour
1 tsp thyme
1 tsp parsley
1/2 c 2% milk

Recipe Directions for Blue Spuds

Preheat oven to 350F. Spray bottom of nonstick baking pan and sprinkle a bit of flour, thyme, parsley & pepper. Pour a little milk to cover pan bottom. Layer potato slices in bottom of pan then fennel & onion on top. Sprinkle with crumbled blue cheese then flour, thyme, parsley & pepper. Place new layer of potato slices then fennel and onion, again topping with cheese, flour & herbs. Repeat until all ingredients used - you can end with a layer of potato or cheese topping as preferred (if top is cheese, bake with lid on pan). Pour milk over entire dish and bake for 45 minutes, until set and golden.
