Blue Cornbread Muffins Recipe

These are more savory than sweet. The nutrition information is based on these being made with water. Also as a side note I make these with Barley Malt rather than honey. I do use Blue Corn Meal for this recipe but it isn't recognized by the nutrition generator.

Recipe Ingredients for Blue Cornbread Muffins

1 cup CornMeal
1/2 cup whole wheat pastry flour
1 1/2 tsp baking powder
1/4 tsp salt
1 large egg
1 tablespoon honey
1 cup water or milk

Recipe Directions for Blue Cornbread Muffins

  1. Pre-heat oven to 425 degrees.

  2. Combine dry ingredients in a medium bowl. In a seperate bowl combine wet ingredients. Mix dry and wet ingredients together and portion batter into muffin tin lined with 10 liners. Or pour into a greased 8x8 square baking pan.

  3. Bake for 10-15 minutes or until tops are golden brown.
