Lean honey ham, blue cheese, apples and walnuts in a balsamic vinagrette- substantial and tasty for lunch.

Recipe Ingredients for Blue Cheese Waldorf Salad

8 cups romaine lettuce
2 apples, diced
1 cup celery, sliced
8 oz. lean deli ham, chopped
4 tbsp walnuts, chopped
4 tbsp blue cheese crumbles
2 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
2 tsp dijon mustard
1 pinch salt
1 pepper

Recipe Directions for Blue Cheese Waldorf Salad

  1. Make dressing- blend olive oil, vinegar and mustard with a whisk or fork. Set aside

  2. In a large bowl add lettuce, sprinkle with ham, blue cheese, apples, celery and walnuts. Sprinkle with salt and add pepper to taste.

  3. Drizzle salad with dressing and toss.
