Delicious breakfast, can use any veggie combo.

Recipe Ingredients for Blue Cheese & Veggie Egg Scramble

1 cup Hash Browns
1/2 cup, chopped Peppers, Sweet, Red
1 cup, pieces or slices Mushrooms
1 cups Baby Spinach
2 medium (4-1/8" long) Onions, Spring Or Scallions
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1/2 serving, raw Cilantro
3 large egg Eggland's Best Egg
2 tbsp Blue Cheese Crumbled Natural
1 tbsp Organic Butter

Recipe Directions for Blue Cheese & Veggie Egg Scramble

  1. Cook potatoes.

  2. Chop veggies & add to potatoes when they are almost done.

  3. Scramble eggs and add to potato/veg mixture.

  4. Sprinkle blue cheese crumbles on top.
