Good over braised cabbage, cauliflower, broccoli, chicken, on hamburgers, anything. There is always one in the family who HATES blue cheese, so use any other cheese for them. Not exactly low-calorie -- of course, use fat-reduced milk rather than half-and-half if you need to.

Recipe Ingredients for Blue Cheese Sauce

2 tbsp butter
2 tbsp flour
1 1/2 c. half-and-half
4 oz. blue cheese, crumbled (can use any other cheese)

Recipe Directions for Blue Cheese Sauce

  1. Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly.

  2. Gradually add half-and-half; cook over med. heat, stirring constantly, until thickened and bubbly.

  3. Add blue cheese (or any other cheese), and continue cooking over low heat, stirring constantly until cheese melts.
