Recipe Ingredients for BLT Cukes

1 oz bacon, 3 slices crumbled
1/2 cup lettuce, finely chopped
1/2 cup baby spinach, finely chopped
1/4 cup diced tomato
1 tablespoon mayonnaise, fat free
1/8 teaspoon salt, optional
1/4 teaspoon black pepper, optional
1 large cucumber

Recipe Directions for BLT Cukes

  1. Combine bacon, lettuce, spinach, tomato and mayonnaise in medium bowl. Season with salt and pepper, if desired, set aside.

  2. Peel cucumber. Trim off ends and cut in half lengthwise.

  3. Use spoon to scoop out seeds; discard seeds. Divide bacon mixture between cucumber halves, mounding in hollowed areas.

  4. Garnish with parsley

  5. Cut into 2- inch pieces
