A healthier version of my friend Stephanie's Blondie recipe. This one tastes really good.

Recipe Ingredients for Blondies by Stephanie and Susan

3/4 cup Original egg beaters
1/4 cup oil
1/4 cup mashed banana
1 1/8 cup brown sugar
1 1/8 cup xylitol
1 1/2 cups pastry flour
1/4 cup oat bran
1/4 cup ground flaxseed
2 tsp baking powder
1/2 tsp salt
3/4 cup chopped pecans

Recipe Directions for Blondies by Stephanie and Susan

  1. Preheat oven to 350. Grease a 9 x 11" pan and set aside.

  2. In mixing bowl, beat egg beaters. Add oil, banana, brown sugar and Xylitol. Beat well. Slowly add the flour, oat bran, ground flaxseed, baking powder and salt. Mix well, then stir in nuts. Pour and spread into prepared pan.

  3. Bake for 25-30 minutes (I did 25, it was fine), or until a wooden toothpick inserted near the center comes out clean. Cool slightly in pan on wire rack.

  4. Cut into 24 equal-sized bars while warm. May sprinkle with powdered sugar if desired.
