Recipe Ingredients for Blintzes

2 c flour
2 c skim milk
3 eggs
1 t salt
1 T sugar

Recipe Directions for Blintzes

  1. Mix the ingredients

  2. Put a large skillet on med-high heat (~7)

  3. Melt a little butter in the skillet (only for the first one--the rest can go on the oil sweated out by previous blintzes)

  4. Ladle enough batter to thinly cover the skillet and fry on each side until golden brown (~1 min; the first one will usually take about twice as long)
