Small blinis with smoked salmon in sour cream

Recipe Ingredients for Blinis


Blinis:
100 g flour
25 g flour, durum wheat
1/4 tsp salt
150 g milk, 2% fat
3 tbsp sour cream
20 g butter
1 egg white

For the salmon cream:
150 g smoked salmon
1 scallion
4 tbsp sour cream
1 lemon pepper

Recipe Directions for Blinis

  1. Mix the flour and salt in a pot. Melt the flaked yeast in the milk, mix well and add to the flour. Blend till smooth, then add the sour cream. Cover and leave for about 30mn at room temperature. Add the melted butter, then the beaten egg white, very gently so it doesn't fall. Make small pancakes with 2 Tbsp of the mixture for each, cooking 3mn each side. Reserve and keep warm.

  2. mince the salmon, grate the scallion, then mix both in the rest of the sour cream, add lemon pepper to taste (about 1/4tsp).

  3. Serve with the warm blinis.
