Blender Pancakes Recipe

Makes 18 servings



I divided this into 18 servings because I usually make 18 pancakes out of this. I use 1 and 1/4 cup spelt berries instead of the flour. If you use flour, you do not have to blend near as long.

Recipe Ingredients for Blender Pancakes

1 3/4 cup buttermilk
1 egg
2 tbsp oil
1 tsp vanilla
1/2 cup oats
2 1/2 cups whole wheat flour
2 tbsp sugar
3/4 tsp salt
1/2 tsp baking soda

Recipe Directions for Blender Pancakes

  1. Blend first six ingredients for 5 minutes in blender on high.

  2. Just before baking, mix in thoroughly, but briefly, using rubber spatula the last three ingredients.

  3. I sometimes use water and buttermilk powder in place of the buttermilk.
