A great way to use wheat kernels and have a great fast breakfast.

Recipe Ingredients for Blender Pancakes

1 1/4 cups water
3/4 cup whole wheat flour (really whole wheat kernels)
1/4 cup nonfat dry milk
1 egg
2 tablespoons oil
1 tablespoon sugar
1 tablespoon baking powder

Recipe Directions for Blender Pancakes

  1. In blender, mix water, wheat kernels, and dry milk on high for 3 minutes. Add egg, oil, sugar, and salt. Blend for 20 seconds. Add baking powder. Pulse three times, just enough to mix. Mixture should foam up and get very light (nice science experiment). Cook immediately on a hot nonstick griddle.

  2. Note: Skim milk may be used instead of the water and nonfat dry milk. Batter also makes delicious waffles. Honey may be substituted for sugar.
