For Thanksgiving. It still has butter and sugar in it, so it is not all that good for you. Some things just can't be altered without it turning out nasty. However, some of the fat and cholesterol have been reduced.

Recipe Ingredients for Blackthorne's Streusel Sweet Potatoes

2 pounds sweet potatoes, peeled and cubed
1/8 cup soy creamer, French Vanilla
1/8 cup maple syrup
1/2 teaspoon vanilla extract
1/8 cup egg beaters
1 teaspoon cinnamon, ground
1/2 teaspoon nutmeg, ground
1/2 teaspoon ginger, ground
1/4 teaspoon cloves, ground
1 cooking spray (butter flavored is best)
1/2 cup flour
1/2 cup brown sugar, packed
1/4 cup butter, chilled and cut into pieces
1/2 cup pecans, chopped

Recipe Directions for Blackthorne's Streusel Sweet Potatoes

  1. Peel and cube sweet potatoes.

  2. Place in large saucepan with water and simmer until very tender and ready to fall apart.

  3. Drain potatoes in sieve and return to saucepan.

  4. Preheat oven to 375F.

  5. Add soy creamer, maple syrup, egg beaters, vanilla extract, and spices to sweet potatoes. Using a mixer, beat until the mixture is smooth.

  6. Spray a small casserole dish with the cooking spray. Place potato mixture in casserole dish.

  7. In food processor, combine butter, brown sugar, and flour. Pulse until the mixture resembles a coarse meal.

  8. Removing food processing container from food processor, stir in chopped pecans.

  9. Add flour/butter/pecan mixture to the top of the sweet potato mixture.

  10. Bake uncovered at 375F, for approximately half an hour.
