Recipe Ingredients for Blackthorne's Spinach and Black Bean Quesadillas

74 grams 6 inch corn tortillas (4)
6 ounces cooked black beans
8 ounces raw spinach
1/2 cup chopped onion
2 teaspoons lime juice
1 teaspoon garlic powder
1 teaspoon cumin (ground)
1 teaspoon chili powder
1/2 teaspoon salt
4 ounces shredded veggie cheddar cheese
4 tablespoons salsa
1 cooking spray

Recipe Directions for Blackthorne's Spinach and Black Bean Quesadillas

  1. Take 6 ounces of black beans; rinse and sort.

  2. Place in small saucepan and cover with two inches of water.

  3. Bring to a boil for five minutes. Set aside for one hour.

  4. Simmer beans gently for an hour or more, until they reach the tenderness you desire. Drain.

  5. Spray a skillet with cooking spray. Saute onions, spinach, beans and lime juice. Add garlic powder, cumin, chili powder and salt. Saute until onions are translucent.

  6. Spray another skillet with cooking spray on medium heat.

  7. Place one tortilla in the skillet; layer with 1/8 cup of the veggie cheese, 1/4 of the spinach mixture, and another 1/8 cup of cheese. Fold in half, and press lightly.

  8. Cook 1-2 minutes on each side, or until the cheese melts.

  9. Repeat with remaining tortillas.

  10. Serve each with 1 tablespoon salsa.
