What it says... peach cake. This did not work out as well as I wanted. I will try modifications in the future.

Recipe Ingredients for Blackthorne's Peach Cake

8 ounces sliced peaches
1/2 cup turbinado sugar
1/3 cup unsweetened orange juice
1/2 cup water
1/2 cup egg beaters
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1 1/2 cup flour, sifted
2 teaspoons baking powder
1 cooking spray

Recipe Directions for Blackthorne's Peach Cake

  1. Combine peaches, orange juice, and sugar. Cover and let stand at room temperature for 24 hours.

  2. Preheat oven to 350F. Spray cake pan with cooking spray.

  3. Drain peach slices, reserving liquid. Chop peach slices.

  4. Arrange peach slices and 1/3 cup of the reserved liquid at the bottom of the pan.

  5. Add egg beaters, water, applesauce and vanilla extract to remaining reserved liquid.

  6. In large bowl, combine flours and baking powder. Add liquid mixture.

  7. Pour into pan over peaches and liquid and bake for 30-40 minutes or until done.

  8. Cool for ten minutes in pan.
