1/2 cup oatmeal, quick cooking
1/2 cup lite soy milk
1/4 cup flour
1/4 cup whole wheat flour
1/4 cup turbinado sugar
3 teaspoons baking powder
1/4 teaspoon salt
1/8 cup egg beaters
1/4 cup unsweetened applesauce
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1 cooking spray, butter flavored

Recipe Directions for Blackthorne's Oatmeal Muffins

  1. Heat oven to 400°F.

  2. Spray muffin tin with cooking spray.

  3. Combine oats, milk, egg beaters, applesauce, and turbinado sugar. Let set for five minutes.

  4. Sift flours, baking powder, and salt.
