Recipe Ingredients for Blackthorne's Lasagna

8 ounces lasagna noodles, uncooked
6 1/2 ounces meatless Boca ground burger
12 ounces fat free mozzarella, grated
7 ounces fat free ricotta cheese
6 1/2 ounces turkey sausage
20 ounces tomato sauce
2 ounces tomato paste
286 grams crushed tomatoes (10 ounces)
5 tablespoons oregano
1 tablespoon basil
3 garlic cloves, crushed
1 teaspoon ground black pepper
2 teaspoons salt
1 teaspoon ground fennel

Recipe Directions for Blackthorne's Lasagna

  1. Bring out Boca burger to thaw.

  2. Combine tomato sauce, tomato paste, and crushed tomatoes in a saucepan. Add oregano, basil, pepper, salt, garlic. Bring to a simmer on medium, then set on low until all ingredients have mellowed and combined in flavor. Turn off stove and set aside.

  3. Take turkey sausage out of skins, and place in skillet over medium. Using spatula, cut into very small, fine pieces. Add fennel. Continue to cut and mix until thoroughly browned. Turn off stove and set aside.

  4. In large cooking pot, bring water to a boil. Add lasagna noodles. Cook 10-11 minutes. Rinse in sieve under hot running, water.

  5. Take small, square pan. Make one layer of lasagna noodles. Make a layer of half the Boca burger and turkey sausage. Add 3-4 ladles of tomato sauce. Add small, tablespoon-sized lumps of 1/2 the ricotta.

  6. Sprinkle a layer of 1/3 of the shredded mozzarella.

  7. Repeat steps 5-6.

  8. Add last layer of lasagna noodles. Add one ladle of sauce across the top and spread about evenly. Add last 1/3 of shredded mozzarella. Cover with foil, and refrigerate until ready to bake.

  9. Heat oven to 375F. Add lasagna with foil still on top, but applied loosely so that the top cheese does not stick to the foil.

  10. Bake for thirty-five minutes, then remove foil and bake for another 10 minutes.

  11. Remove from oven and allow to cool for 5-10 minutes.
