Recipe Ingredients for Blackthorne's Healthier Carrot Cake v.2 (Without Icing)

3/4 cup flour
1/4 cup whole wheat flour
3/4 cup turbinado sugar
2 tsp. baking powder
1 tsp. cinnamon
1/4 cup unsweetened applesauce
1/2 cup egg beaters
1 1/2 cups carrots, shredded
1 cooking spray (butter flavored)

Recipe Directions for Blackthorne's Healthier Carrot Cake v.2 (Without Icing)

  1. Preheat oven to 350°F.

  2. Spray an 8 inch round cake pan with cooking spray (butter flavored is usually best).

  3. In one bowl, mix turbinado sugar with applesauce and eggbeaters and let sugar dissolve.

  4. In another bowl, mix together (preferably sift) flours, baking powder and cinnamon.

  5. When sugar is dissolved, add carrots. Add mixture to dry mixture.

  6. Pour into pan. Place in oven and bake at 350°F for 25-35 minutes, or until done.
