Recipe Ingredients for Blackthorne's Caramel-Pecan Cheesecake

16 ounces Neufchatel cheese (2 8 oz. packages, softened)
3/4 cup turbinado sugar
1/2 cup egg beaters
1/2 teaspoon vanilla extract
1 cup oatmeal (uncooked)
1/2 cup unsweetened applesauce
1/4 cup caramel topping
1/2 cup pecans, chopped

Recipe Directions for Blackthorne's Caramel-Pecan Cheesecake

  1. Preheat oven to 325F.

  2. Combine sugar, egg beaters, and vanilla extract. Stir occasionally, until sugar dissolves.

  3. Separately, mix oatmeal and applesauce.

  4. Press oatmeal mixture into cake pan; bottom and sides.

  5. Add egg and sugar mixture to cheese; mix until smooth.

  6. Pour into pan containing oatmeal mixture "crust."

  7. Bake at 325F for one hour, or until the cheesecake is solidly formed.

  8. Cool and refrigerate.

  9. Apply caramel topping to the top of the cheesecake and sprinkle chopped pecans.

  10. Serve.
