1/4 cup flour
1/4 cup whole wheat flour
1/4 cup turbinado sugar
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup bran cereal
3/4 cup unsweetened applesauce
1/8 cup lite soy milk
1 cooking spray, butter flavored

Recipe Directions for Blackthorne's Bran Muffins, 1/2 recipe

  1. Preheat oven to 400°F.

  2. Spray muffin tin with cooking spray.

  3. Sift together flour, baking powder, and salt.

  4. Soak bran cereal and turbinado sugar in light soy milk & applesauce. mixture for 5 - 10 minutes.

  5. Pour liquid mixture into dry ingredients, stirring just to moisten.

  6. Fill muffin tins 2/3 of the way to allow for rising.

  7. Bake at 400 °F for 20 - 25 minutes.
