Recipe Ingredients for Blackthorne's Baked Custard

2/3 cup egg beaters
2 cups lite soy milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 cup turbinado sugar
8 grams non-calorie sweetener (Sweet-n-Low)

Recipe Directions for Blackthorne's Baked Custard

  1. Preheat oven to 350.

  2. Mix thoroughly the following ingredients: egg beaters, soy milk, vanilla, spices, sweetener, sugar.

  3. Arrange 3 custard cups in shallow, flat pan large enough to accommodate the custard cups.

  4. Add liquid mixture to custard cups.

  5. Boil water, then add enough to fill the pan where the water line will directly correspond to the liquid in the custard cups. Be careful not to splash any water into the filled custard cups.

  6. Bake in oven for 30-35 minutes or until knife is inserted and comes out clean.

  7. Cool, then either serve warm or chill in refrigerator.

  8. Serving suggestion: can be served with fresh fruit/berries and/or Fat Free Cool Whip.
