Recipe Ingredients for Blackened Snapper and Caribbean Rice

1 tsp paprika
1/2 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
1/4 tsp black pepper, ground
1/8 tsp red pepper, ground
12 ounce red snapper fillets
2 tsp olive oil
2 cup long grain white rice, cooked
8 ounce crushed pineapple, canned, packed in juice
130 g limes
1 tbsp brown sugar, packed
1 tsp minced fresh ginger
1/2 tsp minced garlic
1/2 cup sweet red peppers, chopped
1/2 cup scallions, sliced
1/4 cup shredded coconut, toasted

Recipe Directions for Blackened Snapper and Caribbean Rice

  1. In a small bowl, combine first 7 ingredients.

  2. Set a large cast iron skillet over high heat until hot. Brush both sides of snapper with olive oil and dust with spice mixture. Mist with no stick spray and place in skillet. Cook for 2 to 3 minutes per side, or until fish flakes easily when tested with fork.

  3. To prepare rice, drain pineapple and place 1/2 cup juice in a small sauce pan. Transfer the pineapple to a large bowl. Discard the remaining juice.

  4. Cut limes in half and squeeze the juice into the saucepan with the pineapple juice. Discard limes. Stir in brown sugar, ginger, and garlic. Bring to a boil over high heat. Remove from heat and let stand for 20 minutes.

  5. Add the red peppers, scallions, and coconut to the pineapple. Fluff the rice with a fork and add to bowl containing pineapple. Toss lightly to mix. Add the juice mixture. Toss to mix well. Season to taste with salt and black pepper.
