From About.com Southern Food. * 2 teaspoons ground paprika * 4 teaspoons dried leaf thyme * 2 teaspoons onion powder * 2 teaspoons garlic powder * 1 tablespoon granulated sugar * 1 teaspoons salt (already cut in half per user comment) * 2 teaspoons black pepper * 1 teaspoon ground cayenne pepper, or to your taste * 1 teaspoon dried leaf oregano * 3/4 teaspoon ground cumin * 1/2 teaspoon ground nutmeg cvt

Recipe Ingredients for Blackened Seasoning

2 teaspoons ground paprika
4 teaspoons dried thyme
2 teaspoons onion powder
2 teaspoons garlic powder
1 tablespoon granulated sugar
1 teaspoon salt (already cut in half per user comment)
2 teaspoons black pepper
1 teaspoon cayenne pepper (2031), or to taste, which may be 1/4-1/2 tsp
1 teaspoon dried oregano
3/4 teaspoon ground cumin
1/2 teaspoon ground nutmeg

Recipe Directions for Blackened Seasoning

  1. Place all ingredients in a jar and store in a cool dark place. Shake jar well before each use. About 1 1/2 teaspoons of this mix for four servings of chicken or fish, about 2 teaspoons for six.

  2. **CAUTION: HIGH SMOKING, VENTILATE**

  3. Over low heat, melt about 3 tablespoon of butter (or a few teaspoons of olive oil) in a nonstick skillet. As soon as the butter is melted, place the fish in the pan, flipping it over to cover both sides with butter. Then generously coat the fish with the seasoning, flip over again and coat the other side with seasoning.

  4. Now turn up the heat to medium-high and cook on one side until blackened and somewhat crispy. Flip over and cook the other side. Add a little more butter whenever necessary.
