Salmon spiced just right and cooled off a bit with creamy blue cheese sauce.

Recipe Ingredients for Blackened Salmon with Blue Cheese sauce

16 oz salmon fillets
2 tbsp Italian seasoning
2 tbsp Paprika
1 tbsp Cayenne Pepper
1 tsp ground black pepper
2 tbsp extra virgin olive oil
1 tbsp butter
1/2 cup heavy cream
1/2 cup white wine
3/4 cup blue cheese crumbles

Recipe Directions for Blackened Salmon with Blue Cheese sauce

  1. Combine Italian Seasoning, salt, paprika, cayenne and black pepper in a bowl. Spread on a sheet of wax paper and press salmon to season.

  2. Heat olive oil and butter in an oven-safe pan over a med-high heat. Add seasoned salmon and cook 3 minutes a side. Put pan in oven for about 10 minutes at 350 to bring salmon to temp.

  3. Meanwhile bring cream and wine to a boil and reduce. Take off heat and add blue cheese and blend with a fork.

  4. Serve salmon topped with sauce.
