Easy chicken salad with vegetables- great textures!

Recipe Ingredients for Blackened Chicken Salad

3/4 cup brown rice, cooked, long grain
1/2 cup mixed vegetables
1 7/10 ounce chicken tenderloin, blackened and cubed
1 tsp italian dressing
1 pinch salt
1 pinch onion powder
1 pinch cayenne pepper
1 pinch paprika

Recipe Directions for Blackened Chicken Salad

  1. Prepare long grain rice via package directions.

  2. Blacken chicken with onion powder, cayenne powder, paprika, salt to taste. Cubs and leave in skillet.

  3. Steam 1/2 cup of mixed veggies (your choice).

  4. Combine rice, veggies, and italian dressing.

  5. Add rice and veggie mixture to chicken in skillet. Combine and place in bowl to refrigerate. Serve chilled.
