Recipe Ingredients for Blackened Chicken Salad

3/4 cup light mayonnaise
1 tsp Mustard
1/4 cup cider vinegar
1 pound Chicken, Breast, Meat Only (breast,+bone+and+skin+removed)
1/4 cup cajun seasoning
1/2 red pepper
1/2 red onion
1 scallions

Recipe Directions for Blackened Chicken Salad

  1. Combine mayo, mustard, and cider vinegar in a small bowl until well-blended. Set aside.

  2. Preheat oven to 375.

  3. Rinse and pat dry chicken breasts, and place on a plate. Brush with 1/2 of the oil and sprinkle 1/2 of the seasoning over the chicken breasts. Flip over and repeat. Heat a cast iron skillet on medium high. Carefully place chicken breasts in pan. Cook each side for 5 minutes, and then place hot skillet in preheated oven for 10 minutes to finish cooking. Remove and cool chicken.

  4. Once chicken has cooled, cut it into small pieces and place in a large bowl. Pour the mustard dressing over it and mix. Add red peppers onions, and scallions and toss to combine.

  5. Serve over lettuce, or in a wrap.
