Makes 14 servings



blackberry - orange muffins, not too sweet. Try it with huckleberries or raspberries.

Recipe Ingredients for Blackberry muffins

2 cups flour
1/3 cup sugar
1/2 tsp salt
1/4 tsp baking soda
1 1/4 tsp baking powder
3/4 cup orange juice
1/4 cup safflower oil
1/4 cup applesauce
1 egg
1 cup blackberries

Recipe Directions for Blackberry muffins

  1. Preheat oven to 400 F.

  2. Combine the dry ingredients in a bowl; mix well.

  3. Combine the liquid ingredients, and mix well. Add to the dry ingredients and stir just to moisten.

  4. Gently stir in the berries.

  5. Spoon the batter into 14 muffin cups.

  6. Bake for 18 ? 22 minutes.
