Recipe Ingredients for Blackberry Jam Muffins

5 cups whole wheat flour
2 cups rolled oats
4 teaspoons baking powder
2 teaspoons baking soda
2 2/3 cup 2% milk
2 tablespoons vinegar
1 1/2 cups brown sugar
4 eggs
2/3 cup vegetable oil
3/4 cup blackberry jam

Recipe Directions for Blackberry Jam Muffins

  1. Mix milk and vinegar and let sit while you mix the rest. Spray muffin pans.

  2. Mix dry ingredients in one bowl and wet ingredients in another (excluding jam). Pour wet into dry and stir by hand until just mixed together.

  3. Put a little batter into each muffin thing, then add a little spoonful of jam, then a little more batter on top.

  4. Bake at 375 degrees for 20 minutes or until set.
